One of Those Days

I am sure none of the rest of you super moms out there have ever had one of those days where it's dinner time an hour ago, you have no plans for anything, and the children are so beside themselves with hunger you are sure cannibalism might enter their minds at any moment. Well here in this super mom's house it is a well known fact that if I could leave the 'feed your children' part out of life, I would.  To clarify, I have no intention of starving my children but I rely heavily on a menu to keep me on track and food in their mouths.  I feel like a mother bird and that I could literally spend my entire life in the kitchen trying to keep their mouths full.

I have yet to get my menu going after the move, HELP!  Anyway, one night, not so long ago, I was having one of those nights and I did what I always do, check blogs.  Okay, so I don't always blog when my children are starving and I can't think of what to feed them.  BUT I was about to go insane and I thought how better to gain a little sanity than check out what I had missed in the last few days ...   Luckily, a fellow super mom had posted this great 'coffee mug chocolate cake' (I forget the exact name at the moment) recipe and I happened to have all of the ingredients to make it.  The kids had a blast mixing and baking them.  Their favorite part was watching it almost overflow every time but never actually doing so.

My friend, of course, was the true super mom because her kids were eating it for a mid-day summer snack, whereas mine were eating it for dinner.  Oddly enough, I got no complaints and it was the talk of the town for the next few days, "Remember when mom gave us each our very own chocolate cake for dinner?!"  Whatever works.  I am holding seminars on healthy eating for your children starting next week if any of you want to join me :)

I love those choco cakes in a mug or whatever they're called! My kids like them too. We added chocolate chips and marshmallows once, which was super yummy!
